Ginger beer and gall bladder was served at a bar outside San Antonio, Texas. It was called Ginger's Burgers and Beer. It was Ginger's gall bladder in the first drink. They had a makeshift surgical triage in the backroom. Mostly for kidney harvesting. Since they didn't serve hard liquor Ginger's medical friend used a can of beer for the discarded organ. Then someone drank from the can and, a tradition was born.
